Shrimp Scampi

Since we’ve been trying to eat healthier, I’ve spent a loooooot of time online, looking for recipes.  Monday night, I tried one out:

Clean Eating Shrimp Scampi(from
1 lb of frozen shrimp
Juice of 1 lemon
2 TB dried parsley
1 TB garlic powder
1/2 tsp olive oil
1 lb whole grain pasta, cooked & drained


  • Place frozen shrimp in a skillet with oil.  Cook shrimp until they are mostly done & there is liquid in the pan (this will become the sauce)
  • Add everything else (except the pasta)
  • When the shrimp is done & the flavors of the sauce have melded, remove from heat
  • Serve over pasta with a little parmesan, salt, and pepper to taste

The original recipe called for the juice & zest of 2 lemons.  I have no idea what zest is, so I just added the juice of 2 lemons… DO NOT do that!  Trust me on this one! Cody’s face was priceless when he ate that first shrimp…  Let’s just say you needed A LOT of pasta with each bite of shrimp.  Other than the over-lemonizing, Cody approved though 🙂
