Banana Bread

I’ve made this recipe often enough to know Cody loves it… and it’s a healthier variation of a delicious idea 🙂

Banana Bread
from How to Cook for Crohn’s and Colitis by Brenda Roscher

Ingredients

  • 1/3 cup applesauce
  • 2 eggs
  • 3 very ripe bananas, smashed up
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt (sea salt would make it cleaner)
  • 1/2 tsp cinnamon
  • 1/8 tsp ground nutmeg
  • 1/2 cup brown sugar
  • 1 3/4 unbleached flour (whole wheat would make it cleaner)

Directions

  • Pre-heat oven to 350.  Coat loaf pan with veggie spray
  • Combine: applesauce, eggs, bananas, & vanilla. Stir well.
  • Add: baking powder, baking soda, salt, cinnamon, & nutmeg. Stir well
  • Add brown sugar and stir well again
  • Stir in flour until just combined- don’t overmix
  • Pour into prepared pan.  Bake for 45-55 minutes, until a toothpick inserted in the center comes out clean
