Spicy Beef & Bean Chili

I made this earlier this week and it was actually really good!  It’s not very spicy at all so I had no problem eating it, and Cody just added some chopped up peppers from a jar to make it hot enough for him!

Spicy Beef & Bean Chili

  • 1.5 pounds hamburger
  • 1 cup dice onion
  • 1 cup diced bell pepper (I actually threw in 2 bell peppers)
  • 1/4 cup sliced jalapenos (optional… I just let Cody add these later)
  • 1 14.5 oz can diced tomatoes
  • 1 8 oz can tomato sauce (I used a 15 oz can, but it wasn’t too runny)
  • 1 15 oz can red kidney beans, rinsed & drained
  • 2 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp coriander
  • 1/4 tsp crushed red pepper (optional… I opted “no”)
  • 1/4 tsp salt (I used sea salt)
  • top with shredded cheddar cheese and/or light sour cream or Greek yogurt


  • the recipe says to use a Dutch oven, but I just used a big pot… Cook hamburger, onion, bell pepper, and jalapenos over medium heat until hamburger is browned & vegetables are tender (about 10 minutes)
  • Add tomatoes, tomato sauce, beans, and spices & stir thoroughly
  • Bring to a boil, reduce heat, and simmer 20 minutes
