Nut Crusted Chicken

As long as you don’t cook this too long, the chicken stays moist & it’s pretty damn tasty!

Nut Crusted Chicken


  • 3 medium chicken breasts
  • 2 egg whites
  • 1/2 cup pecans
  • 1/2 cup almonds
  • 1/4 cup parmesan
  • 1 tsp thyme
  • 1 tsp marjoram
  • 1 tsp salt


  • Add all ingredients (except chicken & egg whites) to food processor.  Since we just have a Magic Bullet, I grind up the almonds & pecans separately, then mix everything together in a bowl, to avoid burning out the motor.  It should be crumbly & slightly damp
  • Dip chicken in egg whites, then the blended mixture.
  • Place on a cookie sheet & bake at 350 until chicken is cooked, about 30 minutes.  I just cut open one of the pieces & check the color.  When there’s no more pink, I consider it done.
