Strawberry Rhubarb Crisp

Our rhubarb plant has been growing like crazy this year.  We planted it just last year, so it hasn’t really produced anything until now. As much rhubarb as we have… it won’t last long.  It’s just too good in desserts 🙂

This recipe was super easy & sooo good!  Strawberries & rhubarb are definitely one of my favorite combinations.

Strawberry Rhubarb Crisp

From Whole Living


  • 8 oz strawberries, hulled & quartered
  • 8 oz rhubarb, cut into 1/2 inch pieces
  • 1/2 c sugar
  • 1 tb cornstarch
  • 1/4 + 1/8 tsp salt
  • 1 c rolled oats
  • 1/4 c flour (I used Better Batter to make it GF)
  • 1/4 c unsalted butter, melted
  • 1/4 c brown sugar


  • In a large bowl, combine strawberries, rhubarb, sugar, cornstarch, and 1/4 tsp salt.  Pour into 8 inch baking dish
  • In a medium bowl, combine oats, flour, butter, brown sugar, and 1/8 tsp salt
  • Stir until combined & slightly lumpy. Sprinkle over fruit
  • Bake at 375 for about 45 minutes, until juices are bubbling in the center & topping is golden brown.
