Banana Cake

Cody won’t eat bananas that are even slightly mushy (which is weird, because he eats everything), so I end up baking with them a lot. This cake was really good- just a little banana-ish, but still unique.  I used store-bought frosting, but included the recipe, in case you’re more ambitious than I was…

The recipe says the cake should be easily mixed by hand, but I wimped out used my Kitchen Aid instead.  Lazy all around 😉

Banana Cake

From Butter Yum


  • 2/3 c sugar
  • 1/2 c sour cream
  • 1 egg
  • 2 tb butter, softened
  • 2 very ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1 c flour (I used GF Better Batter)
  • 1/4 tsp salt
  • 1/2 tsp baking soda


  • Cream together sugar, sour cream, egg, and butter
  • Add mashed bananas & vanilla extract
  • Add flour, salt & baking soda; mix well
  • Pour into greased 8×8 pan and bake at 375 for 20-25 minutes, or at 350 if using a glass pan

Vanilla Bean Frosting


  • 2 tb butter, softened
  • 1/4 c heavy cream
  • 1/2 tsp vanilla bean paste, or equal amount of vanilla extract
  • 1 1/4 c confectioner’s sugar


  • Cream butter & sugar together until smooth
  • Slowly add cream; stir until smooth
  • Stir in vanilla bean paste until fully incorporated
